This is fermented cool and matured in stainless steel for over a year on fine lees. Now with additional time in bottle, this pours a deeper hue, with a complex nose of gold-hued peach, delicate honeysuckle florals, and lees, all backed by a driving salinity. I love the combination of crisp acidity and rich, creamy texture from lees aging.
