Champagne Domaine de Bichery Les Fontaines 2020

Côte des Bar, Champagne, FranceYoung couple Hannah and Raphael Piconnet took over his family's property in Neuville-sur-Seine, in the Côte des Bar, in 2015. The fruit all used to go to a Co.Op. They still sell some fruit, but of their own 10 organically farmed plots, they create single vintage brut nature cuvées, with no added SO2. This rosé champagne is entirely pinot noir, with 15% grapes vinified as red wine added to the BdN. The grapes designated for the rosé are harvested 2 years later for added richness in the blend. The wine is native fermented in 30% oak, and 70% stainless, with full MLF, and goes to bottle without fining or filtration. After 2 years sur lattes, this was disgorged in March 2023. Pouring a deeper salmon hue, this charms with cherry brioche, strawberry jam, and light toast, finishing with a dusting of stony spice.
