CedarCreek Aspect Collection Rosé Sparkling 2020
Okanagan Valley, British Columbia, CanadaThe pinot noir fruit comes off the coolest block of the original CedarCreek property in South Kelowna and is picked very early, explaining its tart, acidic demeanour. Its bright orange/pink colour results from a two day maceration on skins. Post ferment, the must spends time in large format oak and concrete before it heads to bottle for a three year secondary fermentation on its lees. This is an extremely cool climate sparkler with plenty of acidity and underripe red berries but not much else. Best with goat cheese appetizers or pork dumplings.
