Rías Baixas, Galicia, SpainExpect tightly wound, high-acid red florals with slightly bitter walnut shell notes that infiltrate a plummy, saline palate featuring complex balsamic and sea salt notes designed to intrigue, especially a small crowd of wine geeks. The tannins are light, and the alcohol is low, making for a wine that will benefit from select food pairings. A local classic is sardine bruschetta with tomato and red onion. The ’23 Tinto looks more white than red from outside the bottle, but the word "Tinto" on the label indicates that it is red wine; in this case, it is a 95/3/2 blend of mencía, caiño, and espadeiro. The blend is a rarity in white-centric Galicia and is sourced from 100-year-old vines rooted in Val do Salnés's sandy, granitic soils. The fermentation lasts three weeks on skins, yielding a pale copper/orange colour that resembles a rosé more than a red before it spends over eight months in small French oak barrels.
