Narrative Absinthe NV

Okanagan Valley, British Columbia, CanadaI don't think winemaker Matt Dumayne rests much. The latest Narrative release has been a few years in the making, but the end result is a potent green fairy worthy of the Absinthe name. Built around a recipe from 1855, this glowing green elixir blends two species of wormwood with anise, fennel, hyssop, and lemon balm. To serve, pour 3 parts of ice cold water to 1 part absinthe over a sugar cube (preferably a beet sugar cube *google it). This creates the louching affect, turning the verdant green into a milky white, and releasing the layers of anise, subtle black liquorice, medicinal herbs, lemon peel, and meadow grass, with a kiss of wild mint on the end. A calming and contemplative sipper. Note - while this won't make you hallucinate, it is an overproof spirit, clocking in at 60% alcohol, so best enjoyed sparingly, with lucky friends.
