Domaine du Mortier les Sables 2022

Bourgueil, Touraine, Loire, FranceThe Mortier brothers, Cyril and Fabien, make multiple cuvées reflecting the diversity of the domain’s terroirs. These include this introductory Les Sables, a soft and silky red named for the sandy soils over chalk they grow on. Certified organic, the entire lineup follows a similar path. The fruit is harvested manually in small crates and gently sorted. Depending on the cuvée, the berries are destemmed and fermented spontaneously and slowly in a cool cellar in stainless steel, concrete, or oak vats. The aging is in fruit preserving concrete and oak, 6-24 months, depending on the cuvée. The nose and attack are fresh with bright red berry, soft textures, and juicy black plum and cherry running the length of the palate before a bit of earthy minerality penetrates the finish.
