Champagne, FranceThe house of Champagne Devaux was founded in 1846 by brothers Jules and Auguste Devaux, based in the Côte des Bar. This blend of 80% pinot noir (5% skin contact juice), 20% chardonnay comes off vineyards in the Côte des Barand (PN) and the Côte des Blancs, Côte des Bar, Vitry, and Sézanne (Ch). Fermented in stainless, with 20% reserve wines from large oak casks, this spent 3 years sur lattes before disgorge. Pouring a deeper blush hue, this creamy, pleasant rosé carries strawberry jam, red apples, subtle anise, light toast along the palate, with a lemon laced acidity, and smartly low-ish dosage.
