Champagne Ayala Rosé Majeur NV

Champagne, FranceChampagne Ayala is one of the longer-established champagne houses, founded over 150 years ago in Aÿ. In 2005, the Bollinger family bought this neighbouring estate and set upon a resurgence for the brand, with a complete restoration of winemaking facilities and a bold new direction. This 2019 base just tips in favour of Chardonnay, with 51% sourced from 14 plots, followed by Montagne de Reims Pinot Noir (including 6% still wine from GC Aÿ), and 10% Pinot Meunier. After fermentation in stainless prior to 3ish years on lees, plus 17% reserve wines (18, 17, 16) this was disgorged with 6 g/L in October 2023. Pouring a deeper salmon hue, this toothsome rose is filled with strawberry meringue, Rainier cherry, vanilla brioche, and orange rind, rolling out across the gently expansive core, and finishing with a saline snappiness.
