Prince Edward County, Ontario, CanadaFrom Prince Edward County's Lighthall Vineyards, the 2021 Chardonnay was whole cluster pressed in a mix of 1/3 barrel (1 new barrel, 1 used), and 2/3 stainless. Post ferment the wine underwent monthly bâtonnage over 1 year in oak. A fine edge of reduction leads into this vibrant, long, humming chardy, with savoury pencil shavings to offset the bright lemon and green apple. The finish lingers with a buzzy stoniness.
