The strategy for all his wines is a light-handed approach. Pinot noir is not a grape that is championed in Languedoc, but nighttime harvesting, a 5-7 day cold soak, and gentle plunge downs have yielded a round, soft, drinkable pinot. It is aged in 80% stainless steel tanks, with 20% going into 1–2 year old barrels. This easy drinking, food friendly style is big on fruit but low complexity. Look for fresh berries streaked with classic Languedoc garrigue, strawberries, and rosemary. Laurent suggests you serve it with traditional charcuterie or Bouillabaisse.
