Sherry Jerez - Manzanilla, SpainThe history of Bodega Primitivo Collantes dates back to the 19th century, with the arrival of brothers Primitivo and Tomás Collantes to Chiclana de la Frontera. Today the current Primitivo Collantes is in charge, a young and dynamic member of the new movement of Jerez wines. He oversees the family farm of 55 hectares of vineyards, including the lauded areas of Pozo Galván, Matlián and El Inglês. This is an unfortified palomino, rooted in the region's albariza soils. It was native fermented and aged for 2 years in ex-Fino barrels, imprinting a strong whiff of fortified Fino onto this classically made still white wine. Meadow grass, marcona almond, lemon pith is all imbued with alluring sea breezes which carry through to the lingering saline finish.
