It has an attractive ripe orchard fruit profile that slides down dangerously easily, with red apples, peaches, and just the right amount of lees and bright acidity. What you think will be sweet stays the course, although spicy food would be the best match here for the overall ripeness. 17% saw time in larger seasoned puncheons, before 5 more months on lees prior to blending and bottling.
