The fruit is picked separately and gets an overnight’s worth of skin colour, resulting in its stylish pink-gold colour. Post ferment in stainless steel, it spends three months on lees before bottling. This is a big step up for this wine and a delight to sip. The palate is an enticing mix of red fruits, a touch of pepper, and a slick, smooth, almost creamy palate that slides down easily. The destemmed fruit was held overnight to extract the pale salmon hue, then pressed off for a long, cool ferment in steel, where it remained for three months until bottling. Sleek strawberry and raspberry are amply spiced with peppery baking spices and glide over a glycerol / lees-slicked base to a snappy finish.
