It was then basked pressed into concrete and foudre for aging. Perfumed boysenberry, dusky plum, is threaded with astringently textural black tea and kissed with smoked stones. The fruit comes from 3 Okanagan vineyards, and is 50% whole cluster pressed and 50% whole berries, all naturally fermented over a month before being gently basket pressed to concrete tanks and foudre for aging. The result is a silky soft pinot, with intense spicy, savoury, dark cherry, and just a hint of youthful sticky tannins. It's best with grilled salmon steaks or a mushroom risotto.
