That lends a pronounced toasty autolytic character to the wine, alongside lactic notes of butter and parmesan rind. There's an evolved character to the fruit, with dried green apple and lemon, and for this palate it's drinking just about at peak, hitting a perfect balance between primary and tertiary complexity. The zero dosage gives a leanness to the palate, with brisk acidity that leads to a chalky finish. The base wine was fermented in concrete egg before heading to bottle for 42 months' rest, and disgorge with 0 dosage in summer of 2023. The autolysis is immediately evident, with toast and bread dough basing crisp green and red apple, white blossoms, lemon peel, and a lick of anise.
