Champagne Roger-Constant Lemaire Cuvée Trianon NV
Vallée de la Marne, Champagne, FranceThe Lemaire family has been present in the Vallee de la Marne since the late 19th century. Today, a few generations in, the family is overseeing their sustainably managed (under conversion to organic) 12 hectares. This Cuvée, a 60% PN / 40% Chard blend, is off estate clay and limestone vineyards in the Marne, and was native fermented in stainless (no MLF) before heading to bottle, unfiltered, where it remains until disgorge (around 6-7 g/L). This bottle is a blend of 4 vintages, and fruit from 1er Crus Hautvillers, Cumières, and Villers sous Chatillon. Red apple, toasted biscuit, dough, and meringue flood the creamy palate, with a structural lemon pith bracing, and a subtle ginger spicing.
