Voor Paardeberg, Paarl, Coastal Region, South AfricaFrom Paardeberg sandstone and clay, 1/3 of this chenin was pressed whole cluster, while the rest were destemmed and crushed, with partial skin contact for 7+ days. Once all the lots were fermented, they were blended and rested in neutral barrels for 8 months.
