Summerland Bench, Okanagan Valley, British Columbia, CanadaThe fruit comes off the Summerland Bench at Canyonview Vineyard. The classic pet nat was destemmed into an open top fermentation vessel, and after 36 hours of skin contact, it was pressed into a concrete egg. Following a swift fermentation, it was bottled, rested on lees for six months, and then disgorged for market. The colour is deep pink/orange, the nose a sweetish candied apple, strawberry affair, while the palate is a dry, savoury mix of crunchy red fruit with lightly foamy fizz.
