Stellenbosch, Coastal Region, South AfricaFrom vines up to 20 years, in Stellenbosch's decomposed granites, this cab was fermented warm in open top concrete with near hourly punchdowns during fermentation. Post MLF, this was transferred to older 225L French oak for 1 year. Bitter black cherry, cassis, dark earth, powdery cocoa, and tree branch rules the warming, fuller palate, with soft, sticky tannins framing to a pasty finish.
