Veneto, ItalyThis apassimento wine blends corvina, corvinone, rondinella, and negrara, planted on calcareous clays and gravels, and all harvested very late and left to dry on bamboo racks and straw mats. The process desiccates the grapes to 25% of their weight, concentrating the remaining fruit and sugars. After approximately 3 months, the raisinated fruit is pressed and fermented in stainless, after which it rests in French barrels for 20 months. Ripe and rich with baked plum, bittersweet cassis, dark cocoa, and worked leather, though this full+ bodied red (15%) still carries a freshness that moves it along its plumped, sinewy tannins.
