Austin Hope Cabernet Sauvignon 2020

Paso Robles, San Luis Obispo County, Central Coast, California, United StatesPaso Robles, which roughly translates as “Passageway of Oaks,” is at the core of this flagship cabernet. The nose is about as pure berry fruit as it gets for a cab, with intense black fruit, perfectly ripe raspberry, and spicy blackcurrant streaked with dark chocolate filling the palate. It is intense but with elegant guardrails and perfectly managed tannins. You can approach this impressive cabernet now, but it will age effortlessly through 2030 and beyond. Steak, anyone? The 2020 early growing season was near normal, with early winter and early spring rainfalls just below average. Vine growth and berry development were typical through spring before unusual summer heatwaves that slowed berries, keeping them small and yielding a highly desirable skin-to-juice ratio. Winemaker Austin Hope ferments each selected lot separately in stainless steel tanks for 10-14 days, followed by extended macerations and carefully managed pumpovers. The lots were aged separately for 11 months in a combination of 10% new, 25% once used, and 65% 2-3 times used French oak.
