Salento, Puglia, ItalyThis Salento white is primarily chardonnay, with a splash of other local grapes. The destemmed fruit was flash frozen for a few hours before fermenting in French oak, where it remained for four months on lees with weekly bâtonnage. The embossed label, heavyweight bottle, and Diam10 cork reflect this wine's lofty ambitions. Pouring a deeper yellow hue, this medium+ white opens with fragrant lemon curd, apple blossom, and perfumed vanillin, all seasoned with subtle barrel spices. The acidity just meets the sunned wine at this point, helping to stretch this out to a lemon twist finish.
