Vouvray, Touraine, Loire, FranceFrançois, a former child psychologist, took over the Vallée de Cousse, Vouvray estate from his father in 1987, and is now joined by his son, Julien (8th generation). The vineyards are dedicated to organic viticulture and minimal intervention vinification. These vines are rooted in clay over limestone, and were native fermented over 3 months, stopped with a chill, and transferred to old barrels to age 5 months on lees. Though certainly sec (dry), this has a bump of 8 g/L RS ably balanced out by chenin's racy acidity. Bright tangerine, mandarin, pear streak along the palate, cushioned with a generous sheen of lees over a bed of river stones.
