Saanich Peninsula, Vancouver Island, British Columbia, CanadaPouring a light blush hue, this pinot noir for this traditional method fizz grows on the silty soils of their Brentwood Bay vineyard, and after moving to bottle for secondary ferment, spent 12 months on lees prior to disgorge. Grated parmesan, wild cherry, red apple is braced with high riffing acidity which carries this savoury fizz to a saline finish.
