Savigny-lès-Beaune, Côte de Beaune, Côte d'Or, Burgundy, FrancePascal Clément, well known for his exceptional white wines, loves using older foudre for his whites, as he feels it brings out the saltiness in the wine. Pascal employs MLF but never bâtonnage on his wines, leaving them on full lees in barrels after pressing. From his home village of Savigny-lès-Beaune, this was sourced from numerous hillside plots. Lemon blossom, green apple, and crunchy pear light up the medium palate, lofted by an easy limestone acidity, and over a savoury pencil shavings / lees base, through the buzzy saline finish.
