Okanagan Valley, British Columbia, CanadaThis dessert wine is a bit of a faux-icewine, with ripe merlot clusters picked, then frozen in a freezer, and pressed after sitting at -8 degrees celsius. The ferment was halted to keep the natural sweetness in the wine, while the hue comes from a few days of skin contact. The heady RS keeps it weighty on the palate, with syrupy strawberry jam, cinnamon, and caramelized brown sugar. A brief wave of acidity takes to an equally brief, warming finish.
