Their flagship NV Brut blends 40% chardonnay, 30% pinot noir, and 30% pinot meunier from 6 villages (30 different plots) across the terroirs above, with 3/4 of the blend from the most recent 3 vintages, and 25% perpetual reserve. My bottle was 2021 base, disgorged in October 2023 with 7 g/L. Toast, vanilla wafer, red apple, lemon pith and peel feel quite grippy up front, with a bitter lemon twist, and trailing salinity on the finish. After 30 months on lees, this was dosed with 10 g/L. Ripe red apple, lemon pith and peel, this is quite zesty, with a generous brioche base.
