Paolo Scavino Barolo Classico 2017

Castiglione Falletto, Cuneo, Piedmont, ItalyPaolo Scavino was founded in 1921, and the family-run estate today is in the hands of the fourth and fifth generations, Enrico Scavino and his two daughters, Enrica and Elisa, who farm and produce low-intervention, highly-finessed wines. The 2017 Classico is from a selection of the crus from varying altitudes and soils on the estate, and each plot separately spent twelve months in neutral French before an additional year in large casks before blending. The final selection of wine spends an extra year in stainless steel, followed by ten months of bottle aging. Essentially, the family does all the aging for you. Look for gentle notes of dried roses floral with streaks of orange blossom and cranberries. The palate is perfectly balanced and surprisingly soft, with dried cherry fruit flavours mixed expertly with truffle and earthy notes.
