Western Cape, South AfricaCape Ruby blends Portugal and South Africa with tinta barocca, ruby cabernet, souzão, and pinotage. The wine was allowed to ferment until the desired residual sugar level was reached before fortification with grape spirit kills the yeast, terminating the fermentation. From there, the wine goes on to rest for two to four years before release. Look for a pleasant dark cherry berry nose that spills onto the round, sensuous plate streaked with toffee, raisins, and nutty notes in the finish.
