Thessaloniki Area, Makedonia, GreeceDimitrios Kioutsoukis and his family decided to give up city life to be more connected to nature, moving to Thessaloniki and planting 11 ha of organically farmed autochthonous vines. All of their wines are supremely low intervention, with native ferment, no sulphur additions, and bottling without fining or filtration. Blooming Island is based on Malagousia and Assyrtiko, to which some fresh Xinomavro must was added, kicking off a gentle second ferment in this undisgorged pet-nat. Mouthfilling generous fine mousse carries tangerine, peach, apricot along a sleek, dryish palate to a snappy saline and citrus finish.
