Victoria, AustraliaJoshua Cooper grew up in the vineyards with parents Alan and Nelly Cooper and their pioneering biodynamic Cobaw Ridge winery in Macedon Ranges. He made his first wine with that estate fruit in 2012, and has since been cultivating relationships with top environmentally sensitive growers in Central and Western Victoria for his tight portfolio. His was named Best New Winery by the 2024 Halliday Wine Companion Awards. This cabernet sauvignon is a blend from 4 vineyards in Central Victoria he works with: 50% Dash Farms, 40% Shays Flat, 5% Balgownie Old Vines, 5% Redbank Old Vines. All was destemmed and partially foot-trodden before macerating in open top fermenters over 3 weeks, kicking off a native ferment. This was then basket pressed into older thin-stave Bordeaux barrels for 10 months. Pouring a dusky plum hue, this textural red streams wild cassis, mint, perfumed tayberry across a finely textured palate, with medicinal ferrous notes threaded throughout, and lightly grippy tannins framing.
