Domaine Rolet L'étoile Chardonnay en Novalet 2020
Jura, FranceThis chardonnay is grown on the hills near Lons Le Saunier, with distinguished soils of grey blue marls and star shaped fossils called pentacrine, after which this small appellation was named. Their plot, en Novalet, is located in the village of Planoiseau. L'étoile is fermented in barrique, where it ages for a year before bottling. There's a lovely flinty reduction shaping this savoury medium bodied chardy, with crushed stones, lemon peel, green apple, and a white grapefruit cut that lingers on the saline finish.
