AustraliaTim Wildman MW has spun his colourful career into winemaker over the past years, known for his playful wines like this Astro Bunny. As joyous as Tim is, this happy Bunny blends Vermentino, Gruner Veltliner, Zibibbo, Nero d'Avola with a splash of Verdejo, from various vineyards across Adelaide Hills, McLaren Vale, and Riverland. The early picked white grapes add crunchy acidity, zibbibo was given 24 hours pre-ferment skin contact for aromatics, and the Nero d'Avola was taken from press after just a few hours to give the slight pink peachy hue before it was co-fermented with GV, Verdejo, and Vermentino. Perfumed peach, apricot, and lime pith leap from the glass, propelled by the the Astro's fine mousse, and continue along the lightly creamy, dryish palate to a snappy tangerine finish.
