Weinviertel, Niederösterreich, Weinland Österreich, AustriaWhen Johannes took over the family's 350 year old organic Weinviertel winery in 2013, he began practicing biodynamics (now Demeter certified), as well as introducing soleras, Qvevri, and skin contact white wines. Numen is the top tier of Zillinger's wines, referring to metaphysical activity, and are highly non-interventionist. This old-vine sauvignon blanc comes from highly ripened grapes on loess / limestone / sandstone at 250m, and was destemmed and left uncrushed in Georgian qvevri for 2 weeks before pressing and fermenting in older 700L oak and acacia barrels over 16 months on lees. This was bottled unfined and unfiltered, with no SO2. Pouring a slightly hazy golden hue, this teems bergamot, pekoe, tangerine oil, and apricot along a taut, tight palate. Sleek and clean, there is slight riff of smoked stony textural intrigue here, hinting at the time in qvevri, finishing with a bright salinity.
