They were also a founding member of Corpinnat, a movement beyond Cava that puts emphasis on place and time. This biodynamic brut, their signature wine, leads with a slight majority of xarel.lo, followed by macabeo, and equal parts parelleda and chardonnay (each base wine fermented separately). This bottle spent 62 months on lees and was disgorged in June 2023 with 5 g/L, from a solera started in 1910(!). Said solera lends a sweet oxidation to this brisk fizz, with crisp green and red apple, lemon, and almond throughout, finishing with crushed stones and meringue kisses. This bottle spent 62 months on lees and was disgorged in June 2023. Green and red apple lead into toasted brioche, slicked with anise, and wrapped around a doughy lemon core, finishing with a more toasted biscuit.
