Muscadet, Pays Nantais, Loire, FranceDomaine de la Pépière is one of the region's iconic producers. Their 10 ha estate is part of the Clisson Cru Communeaux, and this is their core, flagship bottling. Organic muscadet from granite soils is pressed and the juice is settled over 12 hours prior to native fermentation in stainless, and then aging on the lees in large glass lined cement vessels, buried in the ground for coolness and quiet (no racking possible) until the following spring. Some bottlings are after 1 year underground. Tight and arrow-like, with a driving, linear acidity housed with light white honey, subtle creamy lees, and lit with green apple and lemon pith.
