They farm 21 hectares of vineyards, embracing some organic and biodynamic practices. This NV Brut blends three recent vintages, wrapping them into a doughy, toasty, vanilla wafer sparkler, with Chenin's characteristic laser acidity carrying this through a persistently humming and subtly saline finish.
