Adelaide Hills, Mount Lofty Ranges, Adelaide, South Australia, AustraliaThe Adelaide Hills is proving itself again as the incubator of pioneering, forward-thinking, envelope-moving wine in Oz. This GV was partially barrel fermented, partially whole bunches, before pressing into ceramic egg, where it rested on lees before bottling. BK (Brendan Keys) looked to Austria for inspiration for this juicy, gently textural white, laden with herbal elderflower, lemon balm, pink lady apples running the streamlined palate, dusted with fine white pepper that lingers on the saline finish.
