La Maldición Malvar en Bota Blanco 2020

Vinos de Madrid, Castilla-La Mancha, SpainThe spontaneously fermented Malvar en Bota macerates for eleven months together with the stems and on the skins in 200 litre amphorae below a veil of flor. A quarter of the barrel is left unfilled to allow the yeast and oxygen to do their thing. Winemaker Marc Isarts says it is not an exact science. Nature is nature, and sometimes the ferment can be more biological, and sometimes it is more oxidative. It opens like a fino, all yeast and doughy before the dried fruit reminiscent of sliced apples and candied lemons kicks in, with a beautiful saline, nutty almond, spicy aftertaste that changes the direction of the wine.
