I can think of so many grapes we could pull out in favour of this variety, which is simply overdelivering at Terravista. After a gentle whole cluster press, the juice runs into older barrels and puncheons for fermentation and five months of ageing on its lees with regular stirring. This is so delicious. Perfectly ripe with delicate acidity, hints of rosewater, lots of lime and peaches, with just a thread of spice in the finish. This was gently whole cluster pressed, settled, and then into 2nd fill and neutral French barrels and puncheons for fermentation and 5 months' rest on lees, with regular bâtonnage. Ripe and lush with rosewater, fragrant peach, lime pith, and jasmine streaming along the ginger spiced palate. Acidity is bright, streaming this to a zesty lime finish.
