Chablis, Burgundy, FranceJean Collet started Domaine Collet in 1954, the heir of a Chablis grape-growing family since 1792. It passed down to his son, and how to grandson Romain, in charge of his first vintage at age 21. Romain moved the domaine to native yeast, and organic and biodynamic farming. This comes from their parcel in south-facing 1er cru Montmains, on stony Kimmeridgian limestone marl rock and topsoil. It was native fermented and rested in stainless for 11 months to preserve its natural edge, with full MLF and no bâtonnage. Tight and taut, this skims across the palate with buzzy lemon, green apple, flake salts, lingering with kimmeridgian energy.
