Amyndaio, Makedonia, GreeceDomaine Oinea is a remote gem in the small mountainous town of Amyndeon, in Macedonia, protected by a mountain range full of conifers, lime trees and chestnuts. In Greek, Aetos means eagle. From limestone soils at 650m, this biodynamically farmed Roditis Alepou is tipped with 3% xinomavro, and was cold macerated for 7 days in stainless, where it rested for a short time, with full MLF and no bâtonnage. Sleek and streamline, this mountain wine is kissed with white grapefruit, scrubby herbs, and lemon verbena, with a tight, buzzy limestone underlay driving it to the finish.
