80x Dam Chardonnay 2020

Four Mile Creek, Niagara Peninsula, Ontario, Canada80x Wine Company is a Niagara-based collab of 4 friends, now 5 vintages deep. They seek out great vineyards and make small lots of rosé, chardonnay, pinot noir, and cider. Case in point, this chardy comes off famed Willms Vineyard and vines planted in 1983. The name came from an argument over whether to make a chardonnay or not, with one of the partners finishing with “Fine, You can have your damned Chardonnay”. This was native fermented in 2nd and 4th fill puncheons over several months. Quite ripe and forward, with custard, pear and mango across a creamy base, spiced gently with wood and lingering with gingersnaps. There's a nice backbone of acidity to keep this bright in the mouth and drive it through the finish.
