Creamy textures are also a must, and the best have layers of flavours, as the latest 2020. Look for an oyster liquor scent mixed with green apples and ripe pear with an early morning bakery whiff. The palate is all circus and broken stone with more pastry notes near the finish. The balance is perfect, weighing freshness and delicate aromas with rich textures and long flavours. A pleasure to drink again. Tantalus BdB comes off a decade old chardonnay block on the East Kelowna estate. Winemaker David Patterson ferments it in older puncheons before it spends seven months on its lees. The secondary ferment in bottle takes place over 22 months sur lattes. It was disgorged and topped up with the 2020 Chardonnay, pushing the residual sugar to a nominal 5.46 g/L. Okanagan Valley, British Columbia, CanadaThe Tantalus BdB is always a joy, and the 2020 is true to form. This chard comes off one estate block of 2013 plantings. It was fermented in older puncheons, with 7 months on lees before heading to bottle, and 22 months sur lattes. This was disgorged in March 2023 with a dosage from their still 2020 Chardonnay, bringing the RS to 5.46 g/L. Burnished lemon leads crisp green apple, Asian pear, seared stone, and ample toast, scented with medicinal Rainier cherry and rock salts across a savoury, structured palate.
