Carneros, Sonoma County, California, United StatesThe grapes are handpicked and transported to the winery in small bins, and gently whole cluster pressed to retain delicate vibrancy and freshness. The wine is fermented in stainless steel tanks and spends 16 months en tirage before dégorgement, and has been aged a minimum of two years to develop its complexity fully. The nose has white flowers and orange blossoms with hints of baguette and honeyed almond. Similar flavours appear on the palate, touched by sweet red apples and soft acidity.
