The Select Reserva is aged in 2nd and 3rd use French oak barrels for ten months, plus another three months in bottle. The result is an intense nose of plummy red fruit lined with vanilla, dense sweet tannins, and a whiff of that stony minerality. Lamb chops work well here. After 2 weeks maceration and fermentation in stainless, this aged in 2nd and 3rd use French barrels for 10 months. Fragrant cherries and violets greet the perfumed nose, and carry through the silken palate, woven with fresh cassis and black plum, finishing with a kiss of smoked stone.
