Tantalus Riesling Lab Hard Pressings Experiment 12 2022

Okanagan Valley, British Columbia, CanadaConfidence is a very infectious trait to have when you are making wine. At Tantalus, winemaker David Patterson has plenty of confidence, and it shows in the annual Riesling Lab label put together by all the visiting understudies who work the yearly crush. This is year 12 of the Riesling Lab experiment, a chance for the cellar crew to use the hard pressings of all the riesling blocks that do not go into the top wines at Tantalus. This year’s iteration of Lab Riesling is a mix of experiments. The bulk of the juice was fermented wild in old Chardonnay barrels. Some of that was blackened, a process of hyper-oxidization of the juice to drive out any phenolics (also fermented wild). A portion of the juice was fermented on Pinot Noir skins, while everything was balanced with a prominent bump of 22g/L of residual sugar.
