It is a traditional method sparkler mixing chardonnay and pinot noir that has spent an impressive 72 months on its lees. It opens with an apple almond nose courtesy of the aforemntioned extended bottle ageing. The palate is mix of creamy brioche streaked with oxidative notes and air-dried apple chips, wild desert sagebrush, all wrapped in citrus. The extended time on lees is evident with oxidative and doughy notes, toasted hazelnut, and dried apple woven with crunchy green and red apple, with a lemon peel twist to tighten the saline finish.
