Descending from an old French family that is established in the Netherlands since the 19th century, (where the V became a W) Joost and Miguela de Willebois settled in Touraine with their 4 sons in 1996. They since hired Patrice Merceron and Alberto Tonetto to oversee the estate. This entry Savvy comes from vineyards from the coast across the valley. After a stainless ferment, this remained on lees for 3 months prior to bottling. Verbena, gooseberry, crunchy green apple streak across the medium palate, with lemon peel tightening, and a fine lees pad slicking the bottom, finishing with a dash of white pepper.
