Burgundy, FranceDrouhin selects a dozen appellations for this pinot noir, off clay and limestone soils, and planted to a density of 10,000 vines per hectare. This is about as elegant as it gets for Bourgogne, and it comes with some freshness, a far cry from how this category was presented in the 80s, 90s and 00s. It is all aged in stainless steel vats for 7 to 8 months, while wines of higher origin can spend time in one to two year old barrels.
